Cranberry Bars
No, Cranberry Bars are not the name of a new design but an easy and yummy cookie recipe.
Josh in today for our recipe. Leah is hanging out upstairs working on new designs and taking a much needed day off. I hope you’ve had a good week!
Cranberry Bars
1 1/2 cup All-purpose flour
1 1/2 cups quick oats
3/4 cup packed brown sugar
1 tsp lemon zest
1/4 tsp baking soda
3/4 cup melted butter
1 16 oz can whole cranberry sauce
1/4 cup finely chopped nuts
In a large bowl, stir together flour, oats, brown sugar, lemon zest, and baking soda. Stir in melted butter. Mix thoroughly.
Reserve one cup for topping. Pat the remaining mixture into an ungreased 12 x 7 1/2 x 2 baking pan.
Bake at 350 for 20 minutes.
Carefully spread cranberry sauce on top of baked crust. Stir nuts into reserved oat mixture. Sprinkle on top of cranberry sauce. Lightly pat down.
Bake 25-30 minutes more until the top is golden.
Cool in the pan on a wire rack.
Cut into bars and enjoy.

Crafty Mom – Yeah, I was just about to change that, but honestly it's kind of funny, so I may leave it.
I've tried this with apricot jam and it turned out excellent, though extremely sweet and rich. You could also try a layer of chocolate with the cranberry for a really yummy twist!
